Cinnamon Sugar Baked French Toast
The is the most delicious vegan brunch made with vegan supermarket finds!! I can’t believe how MANY new vegan products I’m seeing everywhere. One of the products we’ve fallen in love with this month is Just Egg from ju.st which makes classic brunch foods like omelettes and French toast SO EASY to veganize.
You can soak it overnight and pop it in the oven for a special occasion brunch or holiday, or to make any day feel a little special. We love it with fruit and pure maple syrup, but it could also be served along savory brunch favorites like plant based sausages for a hearty meal.

X RECIPE for Vegan Cinnamon Sugar Baked French Toast
Serves 6-8
Ingredients:
1 18oz loaf chiabatta bread, cut into 1-2” chunks, about cups
1 12 oz container Just Egg vegan egg replacer
1 cup plant based milk
4 Tablespoons brown or coconut sugar
1 1/2 teaspoons ground cinnamon
1 teaspoon vanilla extract
Cut ciabatta bread into 1-2” cubes. In my experience one 18 oz. loaf yields approximately 12-14 cups cubed bread. Bread note: I’ve used fancy bakery loaves, and stale pre-sliced supermarket ciabatta for this recipe both with great success!
In a large bowl whisk Just Egg, plant based milk, sugar, cinnamon and vanilla extract until well blended. Add ciabatta cubes and toss well until all cubes are thoroughly soaked with egg mix.
Coat a large 9” x 13” baking dish with coconut oil or vegan butter. Add bread mixture to the baking dish and let it sit for at least 20 minutes, or cover and store overnight in the fridge.
When ready to bake, preheat oven to 350 degrees. Bake uncovered for 25-30 minutes can until top is golden brown. Enjoy!
