Easy Summer Kale Salad
My 7 year old and I where talking about our favorite foods recently and I was shocked when she informed me that mine is SALAD. I said noooooo...it’s coffee/chocolate/peanut butter...but she insisted, pointing out to me that I eat salad at least once every single day so I must LOVE it.
I guess she’s right. I do love salad, and this is the one I’ve been returning to all summer long. Made with only 3 basic ingredients, endless variations are possible based on the summer fruit + plant protein you chose to top it with. I made these with blueberries and strawberries, and the cooked chickpeas and lentils I had in my fridge this week. If you come up with a new variation that you love, please share in the comments!
✖️RECIPE for Easy Summer Kale Salad
Serves 2
Ingredients:
1 head curly kale
1 small lemon
1/2 avocado
Sea salt
Strawberries
Blueberries
Beans or lentils
Instructions:
Rip kale into pieces and wash and dry well. I like to press washed leaves in a clean dish towel to remove as much water as I can. Add clean kale to a large mixing bowl with avocado, salt and juice from the lemon. Massage well for 3-5 minutes until the kale wilts and become a darker green color. Top with sliced berries, beans or lentils, and extra lemon wedges. Enjoy!
