Crispy Gluten Free Waffles
I’ve been searching for the perfect HEALTHY gluten free waffle recipe. You know the one: packed with hearty flavor + made with real ingredients instead of gluten free flour blends heavy on starch and potatoes.
I used a combination of 4 flours for these waffles in place of wheat: oat flour because I love oats, almond flour to keep them oil free but still tender, chickpea flour for plant protein and fiber, and cornmeal for the amazing texture. The result is a healthy waffle that crispy on the outside and hearty on the inside. I hope you’ll save this recipe and give it a try!
Makes 4-6 large waffles
Mix the following dry ingredients in a large bowl:
1 1/2 cups gluten free oat flour
1/2 cup blanched almond flour
1/4 cup chickpea flour
1/2 cup cornmeal
1 Tablespoon ground chia or flax seeds
1 Tablespoon baking powder
pinch sea salt
Make a well in the center of the dry ingredients, and add:
2 1/2 cups almond milk
2 teaspoons vanilla extract
3 Tablespoons date paste, maple syrup, coconut sugar
Mix until well combined. Following your waffle maker's direction, using about 1/2 cup batter per waffle. Cook until crispy and delicious!
Note: Don’t taste the batter! If you taste batter you may be thrown off by the flavor of the chickpea flour, but I promise it goes away as it cooks.
