Chickpea "Tuna" Salad
I grew up in a family that ate tunafish daily. My mom served tunafish in sandwiches, on salads, in casseroles, on bagels, in wraps, on the side…you get the picture. That’s probably why when I transitioned to veganism I missed tuna and struggled to find a suitable replacement until I discovered kelp. Kelp is a sea veggie that has a really fishy flavor, and it gives this chickpea salad a very authentic tuna flavor. Now I’m the mom serving chickpea “tuna” all the ways….
✖️RECIPE Chickpea “Tuna” Salad:
Ingredients:
3 cups cooked chickpeas (or 2 cans, drained + rinsed)
2 Tbsp vegan mayo
2 tsp dijon mustard
1 rib celery, diced
1/4 small red onion, diced
1/4 cup fresh dill, chopped
Juice of 1/2 lemon
2 tsp kelp granules, optional but this is what gives it the “fish” taste
Instructions:
Add all ingredients to a bowl and mash lightly. Enjoy with salad, in a sandwich or wrap. And of course, no fish where harmed here! We love it best in a stacked sandwich or salad jar!
