I’ve been wanting to create an easy, allergy friendly Vegan Queso for a while because it’s such a hit at a party. This is a true make + take recipe. Just grab a bag of chips and go!

It’s also perfect for nachos, in vegan Crunchwraps, homemade enchiladas, burritos, and cheesy rice bakes. Cooked sweet potato provides the color and texture, while prepared salsa provides the spice. I love using chipotle salsa here for a smoky flavor, but feel free to dial up the heat with some chopped fresh habanero or  jalapeño mixed in as well.

✖️RECIPE for 4-Ingredient Vegan Queso:

Ingredients:

1 cup cooked sweet potato

1/2 cup full fat coconut milk

1/2 cup nutritional yeast

1/4 cup chipotle salsa 

Instructions: 

Add cooked sweet potato, coconut milk and nutritional yeast to a small blender and blend on high until smooth and creamy. Add to a small saucepan and heat with salsa. Serve warm with lime wedges, jalapeño slices + chips.
