Soft Baked Almond Flour Chocolate Chippers

Soft Baked Almond Flour Chocolate Chippers πŸͺ No gluten, no problem! You can avoid gluten, dairy + eggs and still make GREAT chocolate chip cookies with that soft baked texture we all loved in childhood.

The trick is using superfine almond flour made from blanched almonds. This yeilds the color and soft fluffy texture you expect, and it’s fairly easy to find in the gluten free section of your local market or online.

RECIPE for Soft Baked Vegan Almond Flour Chocolate Chip Cookies:

Makes 12

Ingredients:

2 cups superfine almond flour made with blanched almonds

1/2 cup chocolate chips

1/2 teaspoon baking soda

6 Tablespoons sugar

1/4 teaspoon sea salt

3 Tablespoons melted coconut oil 

2 teaspoons baking powder

2 Tablespoon almond milk

1 teaspoon vanilla extract 

Instructions:

Preheat oven to 375 degrees. Line a baking sheet with parchment paper. 

In a medium mixing bowl stir together almond flour, chocolate chips, baking soda, sugar and sea salt. In a small bowl, added melted coconut oil, baking powder, almond milk or water, and vanilla extract. Whisk until well combined and then fold into dry ingredients. Scoop rounded tablespoons of batter onto prepared baking sheet. Press lightly to flatten. 

Bake 8-10 minutes. 

Serve warm! Store in an airtight container to maintain soft baked texture. If you prefer a crispy cookie, leave out uncovered 2-5 days.
