Nut-Free + Vegan Penne alla Vodka

Penne alla Vodka was a family favorite before going vegan, and it took a few tries before I came up with this easy weeknight version that we all love. I substitute extra virgin olive oil, full fat coconut milk, and capers in for the usual butter, heavy cream and parmesan cheese to create the same lush texture and briny flavor of the original. Naturally nut free, you can make this recipe gluten free by simply swapping gluten free pasta for regular.

RECIPE for Nut-Free Vegan Penne alla Vodka

16oz penne pasta (gluten free if desired)

2 teaspoons olive oil

4 cloves of chopped garlic 

1 jar of your favorite tomato sauce

1/2 cup full fat coconut milk or coconut cream

2 Tbsp capers

1/4 cup vodka

Pinch crushed red pepper 

Instructions:

Add chopped garlic and olive oil to a large saucepan and sauté on low until garlic begins to brown. Add tomato sauce, coconut milk, capers and vodka. Simmer on low for 20 minutes while you cook your pasta according to the directions on the package. After draining your pasta add it to saucepan with sauce and toss well. Top with fresh parsley or vegan parmesan if desired. Enjoy!!
