Gluten Free Oatmeal Scones

Guys, I love scones. Like really, really, love scones. There isn’t much that beats a warm scone + a cup of coffee on a Saturday morning. With this deep love in my heart I set out to create a truly delicious gluten free and vegan option that my whole family would love. This is the result. Recipe for Gluten Free Oatmeal Scones:

Makes 10

Ingredients: 

1 cup almond flour

2 cups gluten free quick oats

3/4 cup gluten free rolled oats

1/2 teaspoon kosher salt

4 teaspoons baking powder

1/2 cup solid refined coconut oil 

1/2 cup coconut sugar

3/4 cup non dairy milk or unsweetened yogurt

2 teaspoons vanilla 

1 Tablespoon orange zest

1/3 cup chopped pitted medjool dates

1/3 cup chopped pitted dried apricots 

1/2 cup raw walnuts

Instructions:

In a medium bowl add almond flour, oats, salt and baking powder and whisk until well combined. Cut vegan butter into the dry mixture with 2 knives or your fingers until crumbly. 

Mix sugar and milk or yogurt into the dough and mix well. Fold in dried fruits, nuts and orange zest. Refrigerate your dough for 30 minutes. Preheat your oven to 350 degrees whole dough chills. Line a cookie sheet with parchment paper or a silpat mat.

Once dough has chilled, use a 1/3 cup measuring cup to scoop out even portions and and form rustic round scones. Place on lined baking sheet. Bake 20-25 minutes. Cool and enjoy!
