Oatmeal Cookie Apple Crumble

Oatmeal Cookie Apple Crisp! Made in a skillet on the stove and then baked, this unique skillet crisp checks all the boxes. It has soft spiced apples and a crispy decadent oatmeal cookie topping that cracks and crunches in your mouth in the best way.

I plan to bake it up alongside our pumpkin pies for Thanksgiving, but you do NOT need an occasion to make this crisp. Having apples + an oven is reason enough to celebrate, so I hope you save this lovely crisp recipe and give it a try!

RECIPE for Oatmeal Cookie Apple Crumble

Vegan, Gluten + Refined sugar free 

Serves 6-8

Apple Ingredients:

4 large or 6 medium apples

1 Tablespoon lemon juice

1 teaspoon cinnamon 

1 teaspoon vanilla bean powder or extract

1 Tablespoon cornstarch


Crisp Topping Ingredients:

1 cup almond flour

1 cup quick cooking oats, certified GF if needed 

1/2 cup coconut sugar

6 Tablespoons melted refined coconut oil 

1/2 teaspoon vanilla bean paste or extract 

1/4 cup maple syrup

Preheat your oven to 375 degrees. Oil an 8” cast iron skillet and place on your stovetop. 

Peel and slice your apples. Add to a medium bowl and with lemon juice, cinnamon, vanilla and cornstarch. Toss apples well until all they are evenly coated. Add coated apples to the oiled skillet and heat on low. Cook until apples are just softening. Set aside and make crisp topping. 

In a medium bowl whisk together the almond flour, quick oats and coconut sugar. In a small bowl whisk coconut oil, vanilla and maple syrup. Pour oil mixture over flour mixture and mix with a fork until crumb topping forms. The topping mix should be wetter than a streusel topping. If it is grainy and doesn’t easily form large chunk almost like cookie dough, add additional oil and maple syrup by the teaspoon until it does! Using your fingers, pinch crumb topping into chunks and press gently onto the apples.

Bake for 15-20 minutes, taking care not to burn the crumb topping. Serve with non dairy whipped cream, vanilla ice cream, or even a splash of coconut cream like I did here. Enjoy! 

**Skillet note:

If you do not have a cast iron skillet, you can still make this crisp. Simply cook your apple mixture in a regular or nonstick pan on your stovetop. Then pour apples into a greased 8 inch pie pan and continue with recipe as directed.
