Gingerbread Overnight Oats

Gingerbread Overnight Oats! This is the breakfast I crave most in December when every coffee shop is selling gingerbread lattes, and every food blog is posting recipes for gingerbread cookies.

With all of the flavors I want for the holidays, these overnight oats taste decadent but are actually vegan, nut free, gluten free (optional*) and refined sugar free. The trick is to use pumpkin pie spice with molasses for that gingerbread flavor that has you hearing your favorite holiday songs when you take your first bite. 

You can prep this simple breakfast recipe ahead and grab to-go, or warm it up, get cozy and enjoy!

**For a gluten free version simply use gluten free certified oats.

RECIPE for Gingerbread Overnight Oats: 

Ingredients:

1/2 cup oats

1 Tablespoon chia seeds

2/3 cup non-dairy milk

1 teaspoon blackstrap molasses

1 Tablespoon maple syrup 

1/4 teaspoon pumpkin pie spice

Instructions:

Mix all ingredients in a jar, let set overnight and served warmed with spiced almond butter and extra non-dairy milk or yogurt.
