Apple Ginger Dal

This dish is so great for folks who think they don’t like curry + for kids. I kept the spices mild and balanced them with sweet apples and creamy coconut to make it a cozy meal. We love this dal served over jasmine rice with cilantro + lime wedges, but feel free to add a sliced jalapeño if you like things HOT. Naturally gluten free and high in plant protein, this is a recipe I make again and again.

Recipe for Apple Ginger Dal:

Ingredients:

1 small onion, diced

2 cloves garlic, minced

1 teaspoon salt

1 1/2 inch piece fresh ginger, grated

1 teaspoon cinnamon 

1 teaspoon ground cumin

1 teaspoon turmeric

1 1/2 cups dried red lentils

1 can coconut milk 

2 cups water 

2 apples cored and cut into cubes 

Instructions:

Add the onion and garlic to a medium saucepan and saute with 1-2 Tablespoons of water. When onion and garlic are translucent, add salt, ginger, cinnamon, cumin and turmeric and stir to coat the onion and garlic. 

Rinse red lentils well. Add to the saucepan along with the coconut milk and water. Bring to a boil and then back down to low. Simmer on low for 15 minutes. Chop apples while lentils simmer. After 15 minutes add the apples, cover and cook again 5 more minutes. Served over rice with cilantro and lime wedges.
