No-Bake Cookie Dough Cake Pops
These No Bake Vegan Cookie Dough Cake Pops are every cookie dough lover’s dream. Perfect little bites of vegan cookie dough....on a stick...dipped in chocolate…I mean really, what could be bad?
Just 5 ingredients and no oven required, these cuties are oil free, gluten free + date-sweetened.
Use festive sticks or toothpicks to make them holiday-cookie-tray ready, or hide them in the back of the freezer so you don’t have to share! There is no wrong way to eat cookie dough.
✖️RECIPE for No Bake Vegan Cookie Dough Cake Pops
Ingredients:
1 1/2 cups raw cashews
1/2 cup gluten free oat flour
1 1/2 scant cups pitted dates
1 tsp vanilla extract
1/2 cup non dairy chocolate chips + more for melting
Instructions:
Add cashews and oats to a food processor and process until they form a fine flour. Add pitted dates, and vanilla and process again until dough forms. Put dough in bowl or on wax paper and mix in chips in with your hands. Using a teaspoon, scoop cookie dough into your hands and roll into balls. Insert lollipop stick or toothpicks. Place pops on a wax paper lined baking sheet, and set the baking sheet in the fridge to chill.
While pops chill, melt about 1/2 cup of additional chocolate in a small bowl. Dip chilled cookie dough pops in chocolate. Enjoy while chocolate is warm, or place back in the in fridge to harden. Store in the fridge or freezer.
