Easy Oil-Free Free Vegan Waffles
Raise your hand if you are a waffle lover like me!!
Don’t get me wrong, I like pancakes, but I LOVE waffles. As a child my favorite special-occasion treat was waffles and ice cream, and not much has changed. Now that I’m an adult who spends a lot of time in the kitchen, I notice that most pancake recipes are oil-free, while most waffle recipes are full of oil. I decided to play around and come up with a lower-fat waffle recipe and this is the result!
We love these loaded with fresh blueberries and topped with pure maple syrup, but feel free to make plain and top as you wish! (Hint: Vegan ice cream is always a good idea.)
✖️Recipe for Easy Oil-Free Vegan Waffles:
Ingredients:
1 1/2 cups unsweetened plant milk
1 Tablespoon ground flax seeds
3 Tablespoons coconut sugar
3 Tablespoons unsweetened applesauce
2 teaspoons baking powder
1 teaspoon cornstarch
1 1/2 cups flour, I used spelt
1 cup frozen blueberries, optional
Instructions:
Preheat your waffle iron. I recommend a non-stick waffle iron if you want to keep these oil free and you like easy clean up!
In a large mixing bowl combine plant milk, flax seeds, coconut sugar, applesauce, baking powder and cornstarch and mix well. Add flour and whisk until just blended. Let batter sit for 5 minutes.
Fold in optional blueberries if using and add about 1 cup of batter to your preheated waffle iron for each waffle. Cook according to directions + enjoy!
