Sticky Bun Banana Bread

Sticky Bun Banana Bread A classic moist vegan banana bread with a delicious topping that reminds me of sticky buns, this is like the love child of two of my favorite baked goods. Make it with those overripe bananas I know you have languishing on your counter right now!


Banana Bread Ingredients:

1/4 cup unsweetened almond milk

1/2 teaspoon apple cider vinegar

4 spotted ripe bananas 

1/3 cup neutral oil

1/2 cup sugar

1/2 teaspoon vanilla extract

1 3/4 cups spelt flour 

1 teaspoon baking powder

1/2 teaspoon baking soda

Pinch sea salt

1/3 cup chopped raw pecans

Sticky Topping Ingredients:

1/3 cup chopped raw pecans

3 Tbsp melted coconut oil

3 Tbsp cinnamon sugar (I used @primalpalate organic cinnamon sugar) 



Instructions:

Preheat oven to 375 degrees F.

Oil loaf pan or line with parchment paper.

Place almond milk in bowl with vinegar. Set aside for a moment to curdle. Peel and mash 3 of your bananas in a large bowl. Add oil, sugar, vanilla and milk mixture and stir. Add flour, baking powder, baking soda, and salt, and mix until just combined. Pour into lined loaf pan. Mix up Sticky Topping and sprinkle evenly on top of batter, pressing lightly so the topping melts into the loaf when baking. Bake for 45-60 minutes until brown on top. Cool, slice and enjoy!!
