Quick Refrigerator Pickled Veggies

Making your own refrigerator pickles is so easy and inexpensive, and it’s a great way to use up the produce that’s languishing in the bottom drawer of your fridge right now. Dill pickles are my favorite, so I used lots of fresh dill here, but you can use this recipe as a base and add any fresh veggies and herbs you desire.

Quick Refrigerator Pickled Veggies


Ingredients:

1/2 cup white vinegar

1 cup filtered water

1 Tablespoon kosher salt

1 teaspoon cane sugar 

Fresh dill

Mustard seeds

Peppercorns 

Instructions:

Prepare veggies and add to clean glass jars with tight fitting lids. In a small saucepan over low heat warm vinegar, water, salt and sugar until salt and sugar have completely dissolved, stirring well. Pour over veggies and add herbs as desired. Cool to room temperature, seal and place in the refrigerator overnight. Enjoy!
