Double Lentil Soup

Double Lentil Soup Bowls! This is the perfect thick and hearty soup to fill your belly on cool days. Made in the instant pot with a blend of brown + red lentils and a few other basic ingredients you can fix it and forget it until hunger strikes! Serve with crusty bread and loads of fresh herbs to put a smile on your face.



Ingredients:

1 onion, chopped

4 carrots, chopped

6 cups vegetable broth

1/2 teaspoon sea salt

1/2 teaspoon dried thyme

1 teaspoon dried rosemary 

1 cup green lentils, rinsed and picked over

1 cup red lentils, rinsed and picked over

1 medium potato, chopped

2 Tablespoons apple cider vinegar 



Instructions:

Add all ingredients expect apple cider vinegar to a pressure cooker/Instant Pot. Lock lid in place according to manufacturer’s instructions and set to cook on manual for 6 minutes. Allow pressure to release naturally and always be careful when removing the lid! 

When ready to serve, add salt and pepper to taste and stir in the apple cider vinegar. Serve with lots of fresh herbs like parsley, some vegan parmesan cheese and a warm loaf of crusty bread.
