Buffalo Cauliflower Tacos. I’m at the point where I believe cauliflower can do ANYTHING. It’s the unicorn of veggies, turning itself into rice, pizza crust, and now buffalo wings. I love these spicy bites so much that I built a taco around them!

With all of the elements of a plate of wings, these tacos are just what you need to mix things up on Taco Tuesday. They feature chopped celery + carrots and vegan ranch dressing. You can find my homemade vegan ranch dressing here on the blog. Just type ranch into the search bar above!

✖️RECIPE for Easy Buffalo Cauliflower:

Serves 4

Ingredients: 

1 small head cauliflower 

2 teaspoons olive oil 

1/2 cup flour or almond flour

1/2 cup panko or GF breadcrumbs

1/4 cup plant based milk

3/4 cup buffalo sauce

2 Tablespoons olive oil

Instructions:

Preheat oven to 425 degrees. Line a cookie sheet with parchment paper. 

Cut cauliflower into bite sized florets. Add to a large bowl and toss with oil. Add flour and toss again. Add milk to a small bowl. Add breadcrumbs to a medium bowl. Dip each floret first into milk and then into breadcrumbs. Place on line baking sheet. Continue until all florets are well coated. 

Bake 20-25 minutes. 

Remove from oven and coat each piece of baked cauliflower in buffalo sauce. Replace on lined baking sheet and bake 5-10 minutes more. Serve!
