Vegan Smore’s Crispy Treats! Why choose between two classic summer treats: s’mores + rice crispy treats, when you can have both at once? With a health-er rice crispy base of just three ingredients, this recipe is perfect for folks with allergies because it’s very flexible. Simply choose a nut or seed butter that works for you and go from there!

To take me back to summer campfires and star filled night I added a s’mores topping with mini marshmallows and dark chocolate. Our favorite vegan marshmallows are from Dandies, and they are available in many Whole Foods, natural markets, and on Amazon.

✖️RECIPE for Peanut Butter S’mores Crispy Treats:

Ingredients:

1/2 cup pure maple syrup

1/2 cup nut or seed butter

3 1/2 cups crisp rice cereal

1/2 cup mini vegan marshmallows, I used Dandies

1/2 cup chopped dark chocolate bar

Instructions:

Line a 8”x8” square baking dish with parchment paper.

Heat maple syrup and nut or seed butter of choice in a medium non stick saucepan over low heat. Stir until well combined. Add crisp rice cereal and stir again until the cereal is evenly coated. Press cereal mixture into lined baking dish, being careful to reach the corners.

Press marshmallows and chopped chocolate bar into the top of the crispy base. Broil on low for 1-3 minutes until marshmallows are just brown. Remove from oven and cool. I like to place in the freezer to get extra firm before cutting into squares. Store in fridge or freezer. Enjoy!!
