Creamy Vegan Alfredo Sauce
Tofu Alfredo Pasta! Looking for a creamy pile of pasta loaded with veggies + cream sauce for dinner tonight? THIS IS IT! High in plant protein and packed with flavor, I have to stop myself from licking my plate every time I make it.
This is a very forgiving recipe. Firm silken tofu and vegan butter give it the most authentic Alfredo flavor, but it also works with firm tofu and olive oil if they are hard to find. Simply add an extra splash of broth or water until your desired consistency is reached.
For a SUPER high plant protein meal, toss with bean-based pasta and some vegan sausage. Delish!
✖️RECIPE for Tofu Alfredo Sauce:
Serves 8
Ingredients:
1 14 oz. block firm silken or soft tofu*
1/4 cup melted vegan butter
1/2 cup vegetable broth or water
3 Tablespoons soy sauce or Bragg’s Liquid Aminos
1/3 cup nutritional yeast
2 cloves garlic
1 teaspoon dried basil
2 teaspoons onion powder
2 Tablespoons lemon juice (or juice of 1 large lemon)
Instructions:
Blend all ingredients until smooth. Pour over 16 oz. of cooked fettuccine pasta and serve with sautéed spinach and your other favorite veggies!
