Chipotle Tofu Tenders with Maple Dijon Dipping Sauce

Chipotle Chip Tofu Tenders! A healthier vegan version of spicy chicken fingers with honey mustard dipping sauce, these tofu tenders are great over a green salad, or with a side of baked fries. In place of standard breading I used crushed chipotle tortilla chips here for some smokey crunch. The dipping sauce is made with calcium rich tahini for and creamy base.

RECIPE for Chipotle Chip Tofu Tenders 

Serves 4

Ingredients:

One package extra firm tofu

1/4 cup non dairy milk

2 Tablespoons nutritional yeast

1 teaspoon tapioca starch or corn starch

1 1/2 cups crushed bbq tortilla chips (I used @sietefoods grain, gluten + dairy free chipotle BBQ tortilla chips) 

Instructions:

Preheat the oven to 400 degrees. Line a baking sheet with parchment paper or a silicone baking sheet.

Drain, rinse and press the tofu. Slice tofu in half lengthwise, then in half again. Slice tofu into into 1/2” fingers. In a shallow bowl whisk non dairy milk with nutritional yeast and starch. Crush a bag of chipotle tortilla chips well, and measure 1 1/2 cups into a second shallow bowl. Make sure that half of your tortilla chips are crushed very finely and resemble breadcrumbs or the coating will not stick well to your tofu. With one hand add each tofu finger first to almond milk mix, turning until well coated. Transfer to crushed chips and with the other hand coat each tofu finger well. Place on lined baking sheet, leaving room to make sure tofu fingers are not touching. Bake for 20 minutes. Serve + enjoy! 

RECIPE for Tahini Maple Mustard Dipping sauce

Per serving:

1 Tablespoon raw tahini

1/2 teaspoon Dijon mustard

1/2 - 1 teaspoon maple syrup 

Whisk all ingredients well in a small dish. Add warm water if you want a thinner dipping sauce or dressing. Serve!
