Vegan Skillet Brownie
RECIPE for Vegan Skillet Brownie
Gluten - Free // Oil - Free // Nut - Free option
3/3 cup non dairy yogurt
1/4 cup raw tahini or cashew butter
1/2 cup coconut sugar
3/4 cup fine oat flour*
1/4 cup cacao powder
1 tsp baking soda
1 Tbsp tapioca starch or corn starch
1/2 cup chocolate chips
Preheat oven to 350 degrees. Oil a 6” cast iron skillet. In a medium bowl mix the yogurt, tahini, and coconut sugar well. Add dry ingredients and mix until just combined. Using a spatula turn ingredients into oiled skillet. Bake for 11 minutes, remove from oven and top with extra chopped chocolate bar or chips + vegan marshmallows (optional). Return to the oven for 3-4 additional minutes. Remove, cool + enjoy!
✖️Allergy Notes:
I tested this recipe with both organic white flour + gluten free oat flour and they both came out great!
Also tested with both tahini + runny cashew butter and found very little difference. For a completely nut free version, use coconut yogurt + tahini. Note that tahini is made with sesame seeds.
