5 Minute Kale Pesto with Walnuts

5 minute Kale Pesto with Walnuts for those nights when pasta is the only answer. I always thought that my kids would hate pesto but I was very wrong. If I put pesto and tomato sauce on the table with a steaming bowl of pasta, my kids will always reach for pesto. This recipe is the result of my effort to sneak some kale and walnuts into our classic basil blend for the boost of antioxidants + healthy fats.

Recipe for 5 Minute Kale Pesto:

Ingredients:

1/3 cup raw walnuts 

3 Tablespoons nutritional yeast

1 clove garlic 

1 cup chopped kale

1 cup fresh basil 

1/3 cup olive oil

Juice of one lemon

Pinch sea salt

Instructions:

Add walnuts, nutritional yeast and garlic to a food processor and pulse until finely chopped. Add kale, basil and lemon juice and pulse again until everything is very finely chopped. While food processor is running add olive oil in a steady stream, stopping to scrape down the sides once or twice. Add salt to taste. For a smoother pesto add more olive oil. Store in fridge or freeze in an ice cube tray for easy use later!
