Family Bowls with Chunky Thai Peanut Butter Sauce
Family dinners are tricky. In my experience the greater the number of people at the table, the greater the number of likes, dislikes and good old attitude. I deal with this most evenings by putting out a bunch of food options and handing everyone a bowl. A great sauce that everyone loves pulls it all together, and this Chunky Thai Peanut Butter Sauce is one of those recipes that unites us all! Just 3 ingredients (I don’t count water), vegan, gluten and oil free, it’s so creamy dreamy.
Pictured above is my recent dinner bowl, loaded with brown rice, steamed bok choy + carrots, and tofu kebabs, all loaded with this Chunky Thai Peanut Butter Sauce. Down below you can see my bok-choy-hating daughter’s bowl with steamed sugar snap peas peaking out top right. As long as she has a green in her bowl at all I'm happy - the rest is up to her!
RECIPE for Chunky Thai Peanut Butter Sauce:
Ingredients:
2 Tablespoons chunky salted peanut butter*
2 Tablespoons coconut milk
2 Tablespoons warm water
2 teaspoons Thai curry paste (red or green!)
Instructions:
Add all ingredients to a small bowl and whisk well with a forks until combined. Pour over a bowl of you favorite bowl of greens, grains and protein. Serve with lime wedges. Enjoy!
RECIPE NOTES:
*To make it nut free substitute all coconut CREAM for the peanut butter and coconut milk.
