This recipe is a quick and cozy way to capture the flavors of fall no matter where you live. This recipe is vegan and nut free, and can easily be made gluten free by using certified gluten free rolled oats.


RECIPE for Simple Pumpkin Pie Overnight Oats

Serves 1

Ingredients:

1/2 cup rolled oats

1/2 cup pumpkin purée, canned works great

3/4 cup unsweetened nondairy milk

1 Tablespoon chia seeds

1/4 tsp pumpkin pie spice

1 Tbsp maple syrup

1/4 tsp vanilla powder or extract

Instructions:

Add all ingredients to a jar or bowl and stir well. Let sit overnight and enjoy warm in the morning for all the cozy fall feels 🍁
